Tasty Taco Spaghetti

INGREDIENTS

  • 12 ounces uncooked spaghetti

  • 1.5 pound ground beef

  • 1 medium onion diced

  • 1 red pepper diced

  • 1 envelope taco seasoning

  • 1 can (15 ounces) black beans, rinsed and drained

  • 1 can (10 ounces) rotel, undrained

  • 2 cups shredded Mexican cheese blend, divided

Preheat oven to 350°.

Boil noodles to package directions. Drain noodles.

Sauté diced red pepper and onions in 3 tbs butter for 3 minutes or until cooked fully through. Place aside.

Cook hamburger meat on stovetop Med High for 6 minutes. Put taco seasoning in meat.

Add Rotel, black beans, enchilada sauce to meat mixture. After mixed together add half bag (4oz) of cheese on top. Stir thoroughly.

Add noodles to 9x13 casserole dish. Combine the meat mixture on top of noodles. Mix together. Top with rest of bag of cheese (4oz).

Place in oven for 5 minutes.

Enjoy

Optional: Top with Cilantro, sour cream or salsa
